First, the chambers on the heads are larger than the chambers, so with all else being equal, you'll lower the static compression ratio considerably.
Also, the ports in the heads are larger than the heads, so at low rpm's, you may have insufficient vacuum to facilitate good cylinder filling. Secondly, the cylinder bore is 3. If the heads have large valves, it may also be possible to crash a valve into the block deck with a fairly high lift cam. I have run pop up pistons in this combo too, but if you have any questions or concerns use some modeling clay or playdough and put it on the piston and see what kind of clearance you have between you valves and piston.

Composition gaskets will add about 6 cc's to the chamber size, dropping the compression at least one ratio number, the steel ones are way thinner. You'll have all kinds of soot buildup on the deck around the bore openings which creates hot spots and detonation where the gasket's fire ring should be..
